Candied Almonds
2 lbs. almonds
2 lbs. sugar (go by weight, not measured by cups)
1 cup water
1 tbsp. salt
3 tbsp. cinnamon
3 tbsp. ginger
2 tbsp cloves

In large, heavy saucepan combine everything but almonds (preferably not nonstick-it absorbs the seasoning and the next thing you make will taste like the almonds.)  Bring to boil.  Add almonds.  Reduce heat to medium and stir continually until sugar crystallizes again (takes about 20 min.)  Be sure to stir the whole time.

Use a colander or other screening device to remove extra sugar.
Extra sugar is great on top of ice cream or in muffins and cookies.
